This pepper is a hybrid form of the Pasilla pepper, the dried form of the Chilaca pepper, and is generally used to make Mexican mole sauces. The Holy Mole (MOH-lay) pepper plant is compact stretching only to 3 ft. tall, however, they will produce 7 to 9 inches long peppers, so you'll want to make sure these plants are properly supported. Holy Mole peppers will ripen from green to a chocolatey brown color when mature. These plants are bred to grow faster, produce more pods, and resist diseases like the tobacco mosaic virus and the potato virus. This pepper packs a nutty, tangy, delicious flavor with a very mild heat used popularly for mole sauces. Hinkelhatz Pepper Seeds from $4.99
Hinkelhatz Peppers are an American heirloom that has been grown by Mennonite settlers since the 1880s. These small fruits may look harmless, but they pack a surprising amount of heat that adds a little kick to any sort of food dish. The phrase “hinkelhatz” is Pennsylvania Dutch that translates to “chicken heart,” which is used to describe this pepper’s conical shape and size. These plants grow around 2 ft. tall and produce high yields of these small pods, which ripen from a dark green to a glossy red. Hinkelhatz pepper plants also work as great ornamental plants to spruce up your garden! Originally, the Mennonites used Hinkelhatz peppers exclusively for pickling and for making a pepper vinegar out of it due to its surprising heat. However, growers have learned to use these peppers for a variety of culinary uses such as roasting, cooking, drying, and for making sauce. The heat is comparable to that of a Cayenne pepper and the flavors have been described to be very fruity and juicy with every bite you take. Himo Togarashi Pepper Seeds from $4.99
Himo Togarashi peppers, otherwise known as Sweet to Mild peppers, are specialty peppers from Japan used in their traditional cuisine. Known as the Yamato dento yasai, or “special traditional vegetable,” these stringy peppers may look rare and exotic, but they are considered a delicacy mostly used in special stir-fries. Pepper plants will grow to an average of 3 ft. tall and produce heavy yields of stringy-looking peppers that spiral down from the plant’s branches. Ripening from green to red, these peppers have smooth skin but bumpy texture. Himo Togarashi peppers can be harvested when green or red; the redder they are, the sweeter their taste. Himo Togarashi peppers have little to no heat and an incredibly sweet flavor to them. They are best cooked in stir-fries but can also be eaten fresh off the plant! Hellapeño - Seeds from $5.75
Hellapeño - (Capsicum Annuum) The Hellapeno is one of the hotter Jalapeno varieties we have ever tried.  They are miniature Jalapeno type peppers that get about 1.5 to 2 inches in length and a half inch wide.  Very thick walled and juicy.  They start off green and ripen to a dark purple and then finally to a deep blood red.  Their flavor is amazing!  It starts with a sweet complex nuttiness before the heat starts setting in.  The burn is a slow building and long lasting heat.  Not nearly as strong as a Habanero but hotter than most Jalapenos.  The plant this showed up on this year was also the largest pepper plant we have ever grown.  It was 8 feet tall and wide and the trunk was at least 2.5 to 3 inches wide.  At it's peak it had over 350 peppers at one time so a very heavy producer.  Great for salsas and adding great heat and flavor to any dish. Heat level:  15,000 - 30,000 (SHU) Scoville Heat Units – Hot. Flavor:  Sweet, Nutty, Earthy - Complex.

Habanero Yucatan White - (Capsicum chinense) The Yucatan White Habanero are small white jelly bean shaped peppers that originated from the Yucatan Peninsula in Mexico.  The tiny peppers actual produce a good kick of heat.  The plant is somewhat shorter and bushier than other Habanero plants but they produce a ton of fruits.  Ripens from green to pale white.  The longer they stay ripening the whiter they become.  Great variety for sauces and salsa. Habanero Pumpkin - (capsicum chinense)The pumpkin habanero pepper is a cross between African and South American habanero peppers. It was developed by the Exotic Pepper Project at Rutgers University.It ripens to a bright orangish yellow color and the fruits are smooth and slightly winkled. The peppers grow to the size of a golf ball. The capsaicin level is high enough to pack some bite, but does not overwhelm. Compared to a traditional Habanero this Pumpkin variety is very mild. The Habanero chili dates back over 8,500 years old, when it originated from the Amazon and spread to Mexico. Spanish colonists disseminated this pepper to other areas of the world, becoming so popular that taxonomists at the time mistook the pepper's origin for China (hence where the term Capsicum Chinense came from). Habanero pepper plants average around 4 ft. tall, but they can grow much higher when planted directly into the soil in warmer climates. Often compared to the Scotch Bonnet pepper, they both have thin, waxy flesh that shines incredibly bright in the sunlight. These peppers mature from a mustard green to their signature orange color.
