Kabobs are so nutritious and fun to eat! I love to make them for my family because they can be prepared quickly and can be cooked in an oven, which allows me to have more family time! Kabobs are also very versatile! They can be cooked with or without skewers in the oven, on the grill, or on the stove. They can also be cooked with more veggies than meat or more meat than veggies!

Ingredients
For the Skewers

1.5 pounds pork tenderloin, chopped into roughly 1-inch cubes

1-2 bell peppers, chopped into roughly 1-inch cubes

1 large red onion, chopped into roughly 1-inch cubes

1-2 poblano peppers, chopped into roughly 1-inch cubes

About 8 skewers - if using wooden skewers, soak the skewers before you use them
Basting Sauce
-
2-3 tablespoons of avocado oil
-
1/2 teaspoon of black pepper
-
Smoked paprika
-
Cayenne pepper

2-3 tablespoons of Marie Sharp’s Caribbean BBQ Sauce Belizean Barbacoa
Directions
Preheat the oven to 350°.
Assemble the kabobs by putting the pork, bell peppers, onion, and poblano peppers onto the skewers. Feel free to play around with the arrangement of the ingredients.
Mix together the basting sauce in a small bowl. Then brush the first layer onto the kabobs.
Place the skewers onto a baking sheet and place them in the oven.
Bake for about 35-45 minutes or until the meat is cooked. Baste the meat occasionally while it is cooking and make sure that you rotate the meat after about 20-25 minutes of baking. Once the meat is cooked, it is ready to eat and enjoy!
Pro Tip
If you do not want to use the skewers, you can also just place the meat and veggies onto the baking sheet and cook the same way! You can also cook this on a stovetop or grill. Also, I like to leave a little bit of the basting sauce in a separate bowl to put more on the meat once it is plated!
