Avocado Strawberry Spinach Salad

Celebrate the fruits of the season with this delightful summer salad.

Ingredients
Salad

8 cups baby spinach (or more, if desired)
-
3 cups sliced strawberries
-
2 avocados, cubed (medium)
-
1 cup toasted walnuts
-
Lemon juice squeeze (optional)
-
Salt (to taste)
-
Pepper (to taste)
-
½ cup crumbled goat cheese
-
¼ cup extra virgin olive oil (for finishing)
Dressing
- ¼ cup mayonnaise
- ¼ cup buttermilk
- 1 tablespoon dijon mustard
- 1 teaspoon lemon juice
- 1 tablespoon minced shallot
- 1 tablespoon minced red bell pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

1 teaspoon Marie Sharp’s Sweet Habanero Sauce
- Salt and pepper to taste
Directions
Wash and spin the spinach until dry.
Chop the spinach (if desired).
Mix the dressing ingredients in a large bowl and whisk until well combined and adjust seasoning.
Toss the spinach, strawberries, avocados, and walnuts together in the ranch sauce.
Place equal amounts of salad on chilled plates.
Drizzle with extra virgin olive oil and top with goat cheese, salt, and pepper to taste.
Serve and enjoy!
