You sneaky devil - what you really want to know is how long ago we roasted the coffee you bought. We roast to order in small batches 3-4 days per week. The coffee delivered to your door will have been roasted a few days ago and entering peak freshness when you pop open that beautiful Rootless box.  HOW LONG IS COFFEE FRESH? For optimal freshness, we recommend using your coffee within 4-ish weeks after the roast date (sticker on the bottom of your bag). After that, it’s still good, but it will start to lose it’s complexity and the tasting notes won’t be as pronounced. So, treat it like your favorite show—watch it while it's hot! WHAT IS CRAFT COFFEE? Craft coffee is part of a new wave of coffee roasting and serving that’s all about quality. Notes: Tangerine & stonefruit Process: Washed Region: YirgacheffeProducer: Negusse Debela Farm: Smallholder Producers Variety: Dega, Wolisho Altitude: 2050 meters About the Farm: This coffee was produced by smallholder producers in the Worka Chelbesa kebele, or village, in the Gedeo zone of Ethiopia, and was processed at a wet mill in the kebele operated by Negusse Debela. Negusse operates two sites now in Worka Chelbesa, including one in the Danche sub-area, and processes Washed, Natural, and unique experimental lots in an effort to continue improving the quality of their final product. Worka Chelbesa is located in Gedeb woreda, which is the southernmost part of the Gedeo zone. The area is known for its dense semi-forest vegetation, including ensete trees and other shade plants, providing ideal conditions for shade-grown coffee. Local farmers grow Wolisho and Dega variety coffee, which are landrace varieties from the Yirgacheffe region. Cherries are manually harvested before being taken to the processing station where they are handsorted before being processed. Pulped coffee is wet fermented for 72 hours before being washed in channels. The fermentation tanks at Negusse’s sites are ceramic, quickening the fermentation process and contributing to the clarity of the final cup. The coffee is then density sorted for quality, ensuring easy separation in higher grade lots. After fermentation and sorting, coffee is soaked for two hours to complete the fully Washed process and then dried for 10 days. All coffee is hand sorted a final time after drying before being prepared for export.

Notes: Tropical fruit & caramel Process: Natural Region: West Arsi Producer: Smallholder Producers Farm: Smallholder Farms Variety: Landrace and Locally Selected Varieties Altitude: 2100 meters About the Coffee: Our West Arsi Nensebo Natural Grade 2 coffee hails from Ethiopia's West Arsi Zone, specifically the Refisa kebele in the Nensebo woreda. This region's mountainous terrain and unique climate create ideal conditions for coffee cultivation. Our coffee is crafted by nearly 3,000 smallholder family farmers who deliver ripe cherries to the Tracon washing station, established in 2021. Here, traditional natural processing methods are employed: whole cherries are sun-dried on raised beds, ensuring a silky mouthfeel and vibrant flavors. In the cup, you can expect delightful notes of caramel, mango, and stone fruit.
Kitty Town Coffee Thuthan's Ethiopia Sidamo: Light Roast Natural Process from $17.00
Thuthan, like this coffee from Ethiopia, is a little bit imperfect on the outside, but has a heart of gold on the inside. First, we'll talk about the coffee. This coffee is an Ethiopia Sidamo Natural Process--that means that the fruit of the coffee cherry was dried onto the bean, which leaves more delicious fruit notes, but also means that the coffee is nearly impossible to roast perfectly evenly. So the beans are less beautiful, but the taste is unlike any other! Notes of citrus fruits, blueberries, and a touch of floral flavors will hit your tongue in this deliciously complex coffee. Thuthan is a special kitty who had a rough start in life. This girl was born with a cleft lip, was declawed on all four paws, has a nub tail, and two collapsed ears. She was adopted then later found by the shelter on Craigslist abused, beaten, and dejected. Thankfully, Thuthan is living her best life with a human who cares for her, and she was even made famous on TikTok (check it out here)! Even though she's not perfect on the outside, we think she's purrfect to represent our less than perfect coffee!
