The Mosco Chile Pepper is a delicious meaty Annuum variety developed in Pueblo, Colorado over a number of years using selective breeding, and is now considered the official pepper of the state of Colorado! A small, tapered firecracker pepper that slowly builds up heat as you eat it! Malaguetas are a staple in Brazil, Mozambique, and Portugal, and it is a very popular chili. Just don’t get it confused with the name, as its name comes from an unrelated spice in West Africa called the “melegeuta.” The Malagueta produces a bushy, dense plant that reaches 2-3 ft. tall and produces many small peppers that measure about 1-2" in length. Peppers are elongated and have a conical shape that tapers off to a point. Watch as they ripen from green to their bright red at maturity. The Malagueta pepper has a fruity aroma when you smell it, and then has a sweet, citrus yet bitter flavor when you take a bite. Rooster Spur peppers were known for their elusiveness back in the 1970s when then-President Jimmy Carter tried seeking out these peppers after being gifted with this pepper-infused summer sausage. Today, Rooster Spur peppers are grown worldwide and take on many different names – in Japan, for example, they go by the name Takanotsume peppers, or “hawk claw” peppers. These pepper plants will rise to 2 ft. in height, bearing many of these 2” long fruits. The Rooster Spur gets its namesake from its shape. Small, slim, and curved just like Thai peppers, they look just like the spurs roosters use to fend off their enemies. Peppers will mature from green to dark red.
